Eating Healthy with Christoph’s Kitchen

The second episode of “Christoph’s Kitchen” aired on Wednesday at 11 a.m. to provide healthy recipes and cooking ideas to students and professors.

Laura Christoph, associate professor of health sciences and co-coordinator of the health sciences department, is the host of the show. “It’s just something to stay connected with students,” Christoph said. “What I’ve been trying to do, is make sure that people know that I’m available to connect like this.”

While students are at home, they may be more inclined to eat foods containing solid fats and sugar because of the dopamine response, during this stressful time, according to Christoph. However, it will end up leaving students with lower energy levels and a suppressed immune system in a time they need to be their healthiest. Christoph said, “Finding ways to really nourish yourself at this time is really important.”

FPU sophomore Jaimin Wilson said, “I am trying to eat healthier so I have been eating lots of fruit, lean meats and vegetables, but I think I can always do better.”

The first episode that aired last Wednesday, covered mason jar meals, requested by students asking how to stay healthy instead of  grabbing snacks. FPU junior Kaila Frith  said, “I find myself grabbing more snacks instead of meals very often because it’s easier.” Ready-to-go mason jar meals can be prepared on Sunday, and allows you to be ready for the week ahead with a nutritious meal. The convenience of having these meals ready prevents snacking throughout the week.

This week’s episode of Christoph’s Kitchen featured bite-size snacks using muffin tins. Christoph shared a savory egg recipe and a sweet chocolate and peanut butter muffin recipe. “They’re low in added sugar and then they have some more protein and there’s some fruit in there, so it was kind of a healthier version of your typical muffin,”said Christoph.

Students can look forward to a potential episode on healthier ways to cook and eat pasta and an episode on plant-based proteins for the academic showcase.
